Recipe - Beefy Black Bean Soup

Intro: The beef in this beefy black bean soup really boosts the flavors and adds a variety of texture and taste that is unique and delicious.
Ingredients: 1 lb. ground chuck
1 lg. onion, chopped
4-5 cloves garlic, minced
1 lg. carrot, thinly sliced
2 lg. carrots, shredded
1 (11 oz.) can black bean soup
1 (15 oz.) can black beans, drained and rinsed
1 1/2 C. water
1 C. prepared med. or hot chunky salsa
1/4 C. thinly sliced green onions
1/4 C. light sour cream and fresh cilantro sprigs for garnish

Cook beef, onion, garlic and sliced carrot in 3 quart saucepan over medium heat until beef is no longer pink. Stir frequently to break meat apart. Stir in shredded carrots, soup, beans, water and salsa. Bring to a boil, then reduce heat and let simmer uncovered for 15 minutes. Remove from heat and stir in green onions. Garnish with sour cream and cilantro.
